Shrimp Scampi

A quick and flavorful shrimp scampi recipe packed with garlic butter goodness, perfect for weeknight dinners or spontaneous gatherings.

  • 1 pound shrimp raw, peeled, and deveined
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 6 garlic cloves finely minced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish
  • Cooked spaghetti or linguine for serving

Method
 

  1. Bring a pot of salted water to a boil and cook spaghetti or linguine until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil and butter until melted and shimmering.
  3. Add minced garlic and red pepper flakes. Stir constantly for about 1 minute, being careful not to burn the garlic.
  4. Add shrimp in a single layer and cook for 2 minutes per side, or until pink and opaque.
  5. Pour in white wine or chicken broth and let simmer for about 2 minutes until slightly reduced.
  6. Turn off heat, squeeze in lemon juice, and season with salt and black pepper. Stir to combine.
  7. Add cooked pasta to the skillet and toss to coat in the sauce.
  8. Sprinkle with chopped parsley and serve immediately with an optional extra squeeze of lemon.

Notes

Use fresh shrimp for best results. Don’t skimp on the garlic. Serve immediately to enjoy the best texture and flavor. This dish pairs wonderfully with garlic bread, salad, or a glass of white wine.
