Ingredients

  • 2 chicken breasts chopped into bite size pieces
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 1 small red onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Toss chicken, bell pepper, zucchini, and red onion with olive oil, garlic powder, smoked paprika, salt, and pepper on a baking sheet covered in foil.
  3. Spread everything evenly on the sheet to ensure even cooking.
  4. Roast for about 25 minutes until the chicken is cooked through and vegetables are tender.
  5. Serve hot as is or over rice if desired.

Notes

Customize with whatever vegetables you have on hand. For extra flavor, add a squeeze of lemon or sprinkle of fresh herbs before serving.
