My Go To Chicken Salad

A creamy, crunchy, and easy chicken salad perfect for meal prep with flexible add-ins.

Ingredients
  

Main
  • 2 cups cooked chicken shredded or chopped, whatever you have
  • 1/2 cup mayonnaise use Greek yogurt if you want it lighter
  • 1 tablespoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons red onion or green if that is more your thing
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional add ins: grapes sliced almonds, chopped pickles, or anything else you feel like tossing in

Method
 

  1. Toss your chicken into a big mixing bowl.
  2. Add the mayonnaise, Dijon mustard, and lemon juice. Mix well to coat the chicken evenly.
  3. Add the finely chopped celery, onion, and any optional add-ins you prefer. Stir until combined.
  4. Taste the mixture and season with salt and pepper to your liking.
  5. Cover and chill the chicken salad in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, use freshly cooked chicken such as rotisserie, grilled, or poached. Serve it in sandwiches, lettuce cups, or with crackers. Store in an airtight container in the refrigerator for up to 4 days.
