Homemade Focaccia

A soft, chewy focaccia with crispy edges, golden crust, and easy to make with simple ingredients you probably already have.

Ingredients
  

Main
  • 4 cups all purpose flour
  • 1 and 3/4 teaspoons salt
  • 1 packet 2 and 1/4 teaspoons active dry yeast
  • 1 and 3/4 cups warm water
  • 1 tablespoon sugar
  • 1/4 cup good olive oil plus extra for the pan and topping
  • Flaky salt
  • Optional chopped rosemary garlic, olives, cherry tomatoes

Method
 

  1. In a medium bowl, mix the warm water, sugar, and yeast. Let it sit for about 10 minutes until it looks foamy.
  2. Add the flour and salt into a large bowl. Pour in the foamy yeast mixture and the olive oil. Stir until a shaggy dough forms.
  3. Cover the bowl with plastic wrap or a damp towel. Let the dough rise on the counter for about 2 hours until doubled in size.
  4. Grease a baking dish generously with olive oil. Transfer the dough into the dish and gently spread it out. Cover and let it rise again for 30 to 45 minutes.
  5. Preheat the oven to 425°F. Drizzle olive oil over the dough and use your fingertips to create dimples throughout the surface.
  6. If using toppings like rosemary, garlic, or olives, add them now and press gently into the dough. Sprinkle with flaky salt.
  7. Bake for 20 to 25 minutes, or until golden and crisp around the edges. Let it cool slightly before cutting and serving.

Notes

You can make the dough the night before. After the first rise, refrigerate it in a covered bowl overnight. Bring to room temperature before baking. Be generous with olive oil for best texture and flavor.
