Easy Weeknight Meatloaf

A moist and flavorful meatloaf made with a simple mix of ground beef and pork, seasoned perfectly and topped with a ketchup glaze. Perfect for comforting weeknight dinners.

  • 1 pound ground beef 80 percent lean
  • 1 pound ground pork
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup milk
  • 1/3 cup ketchup plus more for topping
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with foil or parchment paper.
  2. In a large mixing bowl, combine the ground beef, ground pork, diced onion, minced garlic, breadcrumbs, eggs, Worcestershire sauce, milk, ketchup, salt, and pepper.
  3. Gently mix the ingredients with your hands until just combined to avoid a dense texture.
  4. Transfer the meat mixture to the prepared baking sheet and shape it into a loaf.
  5. Spread a thick layer of ketchup on top of the meatloaf. For extra flavor, mix in a little brown sugar and mustard if desired.
  6. Bake the meatloaf in the preheated oven for about 55 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Notes

For added flavor, try mixing brown sugar and mustard into the ketchup topping. Leftovers make great sandwiches, and the meatloaf can be made ahead by preparing the loaf and refrigerating it overnight before baking.
