  • 2 full racks of pork baby back ribs
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup barbecue sauce pick your favorite
  • Optional: A splash of apple cider vinegar

Method
 

  1. Flip the ribs over and locate the silver membrane on the back. Use a butter knife to loosen it, then grip with a paper towel and peel it off completely.
  2. In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, chili powder, ground black pepper, and salt to form a dry rub.
  3. Rub the dry mix generously over both sides of the ribs, massaging it into the meat thoroughly.
  4. Wrap each rack tightly in aluminum foil, meat side up, and place them on a baking sheet.
  5. Bake in a preheated oven at 300°F (150°C) for 2 hours and 30 minutes.
  6. Carefully open the foil and brush the ribs generously with your chosen barbecue sauce.
  7. Grill over medium heat or broil in the oven for 10 minutes per side until the sauce becomes sticky and glossy.
  8. Let the ribs rest for a few minutes to allow the juices to settle.
  9. Slice between the bones and serve hot.

Notes

Always use foil to lock in moisture. Don’t skip the dry rub, and for deeper flavor, let the ribs sit overnight after seasoning. Add the barbecue sauce only at the end to prevent burning. You can broil instead of grilling if you don’t have a grill.
