Classic Comfort Meatloaf

Ingredients
  

Main
  • 2 pounds ground beef 80 percent lean
  • 1 cup breadcrumbs plain or seasoned
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 large eggs
  • 3/4 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
Glaze
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, salt, pepper, and thyme. Mix gently using your hands until just combined.
  3. Shape the meat mixture into a loaf on the prepared baking sheet, keeping it tall with rounded edges.
  4. In a separate bowl, mix together ketchup, brown sugar, and Dijon mustard to create the glaze.
  5. Spoon two-thirds of the glaze over the meatloaf and spread evenly.
  6. Bake for 50 minutes, then remove from oven and brush with the remaining glaze.
  7. Return the meatloaf to the oven and bake for an additional 10 to 15 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Use 80% lean ground beef to maintain moisture and flavor. Avoid overmixing the meat mixture to keep the loaf tender. Letting the meatloaf rest before slicing helps retain its juices.
