Method
- Slice your chicken breasts in half horizontally to make four thinner cutlets for even cooking.
- Set up a breading station: place flour on one plate, beat eggs with milk in a shallow bowl, and combine breadcrumbs, Parmesan, garlic powder, salt, and pepper on another plate.
- Coat each piece of chicken in flour, then dip into the egg mixture, and press into the breadcrumb mixture until fully coated.
- Heat olive oil in a skillet over medium heat. Fry each chicken cutlet until golden brown, about 3 to 4 minutes per side.
- Transfer the fried chicken to a baking dish. Spoon marinara sauce over each cutlet and top generously with shredded mozzarella cheese.
- Bake in a preheated oven at 375°F (190°C) for 15 minutes or until the cheese is melted, bubbly, and slightly golden.
- Garnish with fresh basil before serving. Optionally serve with spaghetti, garlic bread, or enjoy as is.
Notes
For a lighter version, oven-bake the breaded chicken on a wire rack instead of frying, and consider using whole wheat breadcrumbs or reducing the cheese as desired.
