Chicken Parmesan

A crispy, cheesy, and saucy comfort food classic made with breaded chicken breasts, marinara sauce, and melty mozzarella cheese, perfect for a comforting weeknight dinner.

  • 2 large boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 cup Italian-style breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Olive oil for frying

Method
 

  1. Slice your chicken breasts in half horizontally to make four thinner cutlets for even cooking.
  2. Set up a breading station: place flour on one plate, beat eggs with milk in a shallow bowl, and combine breadcrumbs, Parmesan, garlic powder, salt, and pepper on another plate.
  3. Coat each piece of chicken in flour, then dip into the egg mixture, and press into the breadcrumb mixture until fully coated.
  4. Heat olive oil in a skillet over medium heat. Fry each chicken cutlet until golden brown, about 3 to 4 minutes per side.
  5. Transfer the fried chicken to a baking dish. Spoon marinara sauce over each cutlet and top generously with shredded mozzarella cheese.
  6. Bake in a preheated oven at 375°F (190°C) for 15 minutes or until the cheese is melted, bubbly, and slightly golden.
  7. Garnish with fresh basil before serving. Optionally serve with spaghetti, garlic bread, or enjoy as is.

Notes

For a lighter version, oven-bake the breaded chicken on a wire rack instead of frying, and consider using whole wheat breadcrumbs or reducing the cheese as desired.
