Buffalo Chicken Dip

  • 2 cups shredded cooked chicken rotisserie chicken works like a charm
  • 8 oz cream cheese softened
  • 1 cup ranch dressing
  • 1 cup buffalo wing sauce Frank's RedHot is a solid pick
  • 1 and 1 half cups shredded cheddar cheese
  • Half cup crumbled blue cheese unless you think it smells like dirty socks

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large bowl, stir together the softened cream cheese, buffalo wing sauce, and ranch dressing until smooth.
  3. Fold in the shredded chicken, shredded cheddar cheese, and crumbled blue cheese until well combined.
  4. Spoon the mixture into a baking dish and spread it evenly.
  5. Bake for 20 to 25 minutes until the dip is hot, bubbly, and golden around the edges.
  6. Remove from oven, allow to cool slightly, and serve hot with chips, celery, sliced baguette, or crackers.

Notes

To make ahead, prepare the dip up to the point of baking, cover with foil, and refrigerate. When ready, bake as directed. Optional add-ins include green onions, diced jalapenos, or chopped cooked bacon. To keep warm during parties, transfer to a mini slow cooker and set to warm. You can freeze leftovers in a freezer-safe container and reheat in the oven or microwave. For gluten-free, ensure ranch dressing and hot sauce are gluten-free and choose appropriate dippers.
