Baked Salmon with Lemon

Ingredients

  • 4 salmon fillets skin on or off, totally your call
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper season like you mean it
  • 1 lemon we'll slice it and juice it so it can pull double duty
  • 2 cloves garlic minced (don’t skip this unless you hate flavor)
  • Fresh herbs like dill parsley, or thyme or whatever is not wilted in your fridge

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a baking dish or sheet with parchment paper and place the salmon fillets skin side down.
  3. Drizzle olive oil over the fillets, season with salt and pepper, and rub the minced garlic on top.
  4. Slice the lemon thinly and place the slices on top of each fillet. Squeeze a bit of lemon juice over the salmon as well.
  5. Add fresh herbs on top, either whole or chopped.
  6. Bake the salmon in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
  7. Remove from oven and serve with your favorite side dishes. Optionally garnish with a lemon wedge.

Notes

Avoid overcooking the salmon to keep it moist and tender. Store leftovers in an airtight container in the fridge for up to two days. Use leftovers in salads, wraps, or scrambled eggs. Feel free to customize the recipe with different herbs, spices, or add-ins like cherry tomatoes or chopped nuts.
